Wheat-free flour is a must for this recipe
Gluten Free Lefse
4-5 cups cooked potatoes, mashed or riced
1/3 cup solid shortening
1/2 teaspoon salt
1-1/2 cup cream or half and half
1 teaspoon sugar
2-1/4 cup gluten free baking mix
Mix together hot potatoes, shortening, cream, sugar and salt. Cool in the refrigerator overnight.
When you are ready to bake the lefse, add about one and one-half-cup of the baking mixt to the potato mixture. Use
remaining gluten-free flour to coat each tennis-ball size lefse dough. Roll out using the remainder of the flour and bake on a preheated lefse griddle at about 450 degrees. Cool under damp towels or a lefse cozy.
