Plett Plan for Swedish Pancakes

The traditional Swedish home has a "plattpanna" which is a special frying pan used only for small, thin, Swedish pancakes. The pancakes are about 3 inches across. They are often served as a special treat for both children and adults. Grandma and Grandpa enjoyed their Swedish pancakes with fruit preserves, syrup, or powdered sugar. They're especially good with lingonberries and served for dessert in the traditional Scandinavian home.

Cast iron pan makes seven 3" Swedish pancakes at one time.

Swedish Pancakes for the Plett Pan

* 3 eggs
* 1 cup of milk
* 1½ cups sifted flour
* 1 tbsp. sugar
* ½ tsp. salt
* ½ cup cream
* 2 tbs. melted butter (not margarine)
* Lingonberry or raspberry sauce or maple syrup
* Powdered sugar for topping


Mix dry ingredients. Stir in eggs and milk until smooth. Add oil or butter. Pre-heat the Plett Pan and season it well with butter or oil. Drop a small amount (maybe 1-2 tablespoons) into each depression in the pan. Fry on both sides until light brown. Serve immediately with your favorite sweet topping.
