4 eggs 4 1/4 cup powdered sugar (about a 1 pound bag) 1/4- 1/2 cup flour 1 tablespoon freshly grated lemon zest or 1/4 teaspoon lemon flavoring 1 teaspoon baking powder 1/2 to 1 teaspoon anise extract, if you'd like Mix the eggs until lemon-colored. Slowly add the sugar to the beaten eggs. Mix in the dry ingredients and anise extract. Roll out the dough using a regular rolling pin to about 1/2 inch thick. Use more powdered sugar or flour to help with the rolling process. Lightly flour (or sugar) your springerle rolling pin and carefully roll the designs across the cookie dough. Try to maintain about a 1/2 inch thick cookie. Cut the cookies apart and place on a lightly greased cookie sheet. Let the cookies rest uncovered overnight. Bake the next day at 275 degrees for about 25 minutes. The flavors will intensify as they sit--so enjoy them in about two weeks. These cookies are great Scandinavian gifts and are gone in a flash. The hard part is waiting for the flavors to grow before you eat them all! |
