Fattigmand RollerPastry Roller
This special cookie cutter is rolled on the sturdy dough to make a diamond shape with a slit in the middle of each cookie. One end of the cookie is slipped through the slit before the cookie is deep-fried. Most Scandinavian homes serve the cruller sprinkled with powdered sugar. Your family and friends will enjoy this simple yet delicious addition to your dessert table. 2 1/4" roller made of heavy aluminum to cut perfect fattigmand cookies everytime. Fattigmann 4 egg yolks 1/2 cup powdered sugar 3 tablespoon butter 1 tablespoon grated lemon rind 1 tablespoon brandy or other flavoring 1/4 teaspoon salt 1/2 to 3/4 cup flour oil for deep frying the fattigmand Beat egg yolks, sugar, and butter for several minutes. Stir in brandy (or other flavoring), lemon rind, slat, and the smaller amount of flour to make a stiff dough. Add the other 1/4 cup of flour if needed. Mix together, but do not over mix. Chill the dough. Using your pastry board and cloth, turn the dough onto the floured pastry board. Roll out the dough to a thin consistency. Cut strips with the fattigmand roller to about 3 inches long. Twist an end through the middle gash. Deep fry the fattigmand in 375 degree oil. Drain on paper towels. Serve with powdered sugar or preserves. |
