This is a great gift for the person who likes to make homemade potato sausage, deer meat sausage, or ground beef and pork. Potato sausage (also known as potato korv) is a staple at the Swedish Christmas Eve supper or at a Smorgasbord. This is a sample, free recipe for you to try for your family and to make tasty memories the Scandinavian way. Potato Sausage (Potatiskorv) 1 1/2 pounds of pork shoulder 1/2 pound beef chuck 1 small onion 6 medium raw potatoes 1/2 teaspoon sugar 2 teaspoons allspice 1/4 teaspoon pepper 4 teaspoons salt 7 to 8 feet sausage casings Put potatoes, meat, and onions through the meat grinder one time. Add spices and mix thoroughly. Stuff meat mixture into casings and tie ends if needed. To cook the sausage, cover sausage with boiling water. Return to boiling and cover and simmer for 45 minutes. Carefully remove from water and drain. Cut into two inch lengths. Serve with mustard or mustard gravy if you'd like. |
