Delicious Rhubarb Pie
Best Rhubarb Pie Recipe
4 1/2 cups chopped rhubarb
1 1/3 cups white sugar
6 T flour
1-2 T butter

Preheat your oven to 450 degrees. Place bottom crust into pie pan and gently form it to the pan. Mix the flour and sugar together. Place 1/4 cup of the mixture in the bottom of the pie. Place washed and chopped rhubarb in pie pan. Distribute sugar/flour mixture on top of rhubarb. Dot with chunks of butter. Top with remaining slitted pie crust.
Bake pie at 450 degrees for 15 minutes on the lowest oven rack. Lower heat to 350 degrees and bake another 40-45 minutes. You may place aluminum foil under the pie plate or on the bottom of the oven and watch for spillage as the rhubarb tends to spill over its pastry top. Cool and serve with whipped cream or ice cream. Sweet and Sassy Rhubarb Sauce
1/2 c. sugar
1/3 c. water
2 1/2 c. washed, chopped rhubarb\
dash of nutmeg
1 t. grated lemon peel
Bring sugar and water to a gentle boil. Add rhubarb and simmer 10 minutes. Add a dash of nutmeg (if you like) and the lemon peel. Cool and serve over ice cream, on angel food or pound cake, or all by itself for dessert. Makes your mouth water!
