1 1/2 pounds of pork shoulder
1/2 pound beef chuck
1 small onion
6 medium raw potatoes
1/2 teaspoon sugar
2 teaspoons allspice
1/4 teaspoon pepper
4 teaspoons salt
7 to 8 feet sausage casings
Put potatoes, meat, and onions through the meat grinder one time. Add spices and mix thoroughly. Stuff meat mixture into casings and tie ends if needed. To cook the sausage, cover sausage with boiling water. Return to boiling and cover and simmer for 45 minutes. Carefully remove from water and drain. Cut into two inch lengths. Serve with mustard or mustard gravy if you'd like.
