Dessert Waffles
from the "Scandinavian Cookbook"

1 3/4 cups heavy cream, whipped until stiff
1 1/2 cups cake flour
1/2 cup ice water
1 tbsp. sugar
1/2 tsp. salt
3 tbsp. melted butter
Beat cream until stiff. Sift in flour, add ice water, sugar, and salt, and stir until well blended. Pour in melted butter.
Brush the waffle iron with butter or spray with non-stick oil. Pre-heat the iron slowly. Pour in batter by tablespoonfuls and bake until golden brown. Place waffles on rack to keep crisp. Serve immediately with coffee or as dessert with preserves and sugar and whipped cream.
