Impossibly Easy Pumpkin Pie ​

1 can canned pumpkin, not pumpkin pie mix
3/4  cup biscuit mix
3/4 cup sugar
1 can evaporated milk
2 teaspoons pumpkin pie spice
1 1/2 teaspoons vanilla
2 eggs
Whipped topping, if desired


Steps
  • Heat oven to 350°F. Spray or grease 10-inch pie plate.
  • Blend all ingredients for 2-3 minutes in a blender or food processor
  • Pour into prepared pie plate.
  • Bake 45-60 minutes or until knife inserted in center comes out clean. It may be a little wobbly in the center when you take it out. Cool 30-60 minutes. Then refrigerate about 3 hours or until chilled. Serve with whipped topping. Cover and storen refrigerator. Can be made a few days ahead of time.
If you don't have pumpkin pie spice, use 1/2 teaspoon of nutmeg, 1/2 teaspoon of ginger, and 1 teaspoon of cinnamon.
